Lettuce Wraps

I’ve just returned from a National Soccer competition in South Carolina for my 13 year old son’s team.  We had a great time with 16 boys, siblings and parents on a long bus ride and eating on the road for 6 days.  You can be very creative when on the road and still stick to a pretty healthy diet but it was definitely a challenge.  I am very excited to be home and be able to prepare some healthy food in my own kitchen!  I found this recipe for Lettuce Wraps and think it will make the perfect summer lunch.  It is super healthy, light and filling all at the same time.  It is also vegetarian and gluten-free.

Bean and Avocado Lettuce Wraps

Ingredients

4 romaine lettuce leaves (choose firm and not too big)
1/4 cup of pinto beans
1/2 cup black beans
1/2 avocado, diced
1 tomato, diced
1/4 cup sliced onion
1 slice of lime and cilantro for seasoning

Directions

Place lettuce leaves on a plate and distribute beans between the 4 lettuce leaves.

Add the avocado, tomato and onion evenly over the romaine lettuce.

Squeeze the lime and sprinkle the cilantro over other ingredients and add sea salt if desired.

Optional: You can replace the pinto beans with hummus if desired.

Chill or enjoy immediately.
