Homemade and Healthy Fruit Snacks Kids Will Actually Eat

Kids are bombarded by bad food choices in every color, shape and size.  They make everything so cute and tempting to lure in our young children.  Advertisers make food seem so fun.  What’s a mom to do to serve up creative snacks that don’t look or taste weird?

This really simple homemade fruit snack recipe may be just the thing. The key to making this work is all in presentation. Go the extra mile, pull out the candy mold or buy one and make them into cute little teddy bears like fruit snacks are supposed to look.

Real Strawberry Fruit Snacks

1 cup water (divided)

½ cup (8 tablespoons) gelatin powder (Great Lakes Gelatin from grass-fed cows)

¼ cup honey

organic apple juice or other 100% fruit juice

1 cup pureed strawberries (puree in blender or with immersion blender)

Instructions:

Get everything set up and measured out before assembling because gelatin can set up very quickly!

  • Puree fruit until smooth.
  • Measure  1/2 cup of fruit juice.
  • Boil ½ cup water.
  • Place the other ½ cup of cold water in a bowl
  • Add the gelatin powder and whisk or stir vigorously to make a paste
  • Quickly add the boiling water and stir some more, it will be quite thick but you should be able to still stir it.
  • Now add the honey, juice and fruit stirring with each ingredient, whisk is great.

Pour this into fun shaped molds (sprayed with all natural non-stick oil of your choice). Or a glass square dish and cut into squares when set.

Let it set up in the fridge for 2 hours and should be stored in fridge.

Another great after school snack we discovered will get our kids to eat more fruit is to simply cut up fresh fruit and put it on skewers.  Cut at least one into a star or fun shape to top off the creation. Put these skewers in a tall cup.  They just love eating fruit this way.  It makes it seem like a special occasion (like the ones you buy from Edible Fruit Specialty shops without the crazy high price tag).
