Pumpkin Banana Waffles Paleo and Gluten Free

We all know that breakfast is the most important meal of the day and also the biggest factor in how much energy you have throughout the day. I find this to be especially true with the Paleo diet.  In the beginning I ate eggs every single morning and indulged in lots of all natural bacon.  This gets old pretty quick and so I’ve been branching out.

I have fallen in love with a new outside the box paleo breakfast, Pumpkin Waffles.  Sounds a bit weird but you will love these and so will your family.

Pumpkin Banana Waffles Paleo Style

Ingredients

  • 2 large bananas, ripened and mashed
  • 1⁄2 cup organic pumpkin puree
  • 5 large eggs
  • 1 tsp pure vanilla extract
  • 1⁄2 cup almond butter
  • 1⁄4 cup coconut oil (melted)
  • 1⁄2 cup coconut flour
  • 2 Tbs pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp sea salt

Optional: Add chopped pecans 1/4 cup

Note: The riper the banana is the more naturally sweet your waffles will be.

Instructions

  1. Preheat your waffle iron.
  2. Mix the bananas, pumpkin puree, eggs, almond butter, and coconut oil until smooth (I use my vitamix blender). Add the vanilla. Then mix the dry ingredients: the coconut flour, pumpkin pie spice, baking soda, baking powder and salt. Mix the banana mixture with the dry ingredients until well blended.
  3. Lightly brush the waffle iron with the melted coconut oil. Using a ladle, add the batter into the preheated and greased waffle maker and spread it evenly across the surface (don’t overfill). Cook until lightly brown. Serve with pure maple syrup.  I also find it easy to add the batter to a large pyrex measuring cup to make it easier to pour into the waffle maker.

Makes 5 Scrumptious and Paleo approved waffles!
