Best Way To Cook Broccoli

When the enzyme myrosinase reacts with glucoraphanin it produce sulforaphane, and the reaction occurs when these two compounds mix, often caused by the chewing of the plant. It is very important to cook broccoli in a manner that will retain its important nutrients and enzymes and best way to preserve myrosinase is to lightly steam broccoli for no more than 3 to 5 minutes.

Creamy Broccoli Anti-cancer Soup Recipe

Ingredients:

2 tsp. extra virgin olive oil
1 medium onion, finely chopped
2 medium stalks celery, finely chopped
2 medium potatoes, peeled and cubed
4 cups fresh broccoli, including stems, set aside florets after steaming.
2 ½ cups chicken broth
1 cup unsweetened almond milk
Salt and freshly ground black pepper
¼ cup feta cheese (optional)

Instructions:

Heat oil over medium heat in a large pot.
Sauté onion and celery 4-5 minutes until softened.
Add potatoes and broccoli stems, sauté 2 minutes.
Now add broth and almond milk, bring to a boil.
Add salt and pepper to taste.
Reduce heat, cover, and simmer for approximately 20 minutes.
When simmered and vegetables tenderized, Pour soup into blender and puree until very smooth.
When serving garnish the bowls with a lot of broccoli buds and feta cheese– this way the sulforaphane will be produced.

Makes 6 servings.

When making creamy broccoli soup, myrosinase is destroyed during the simmering time. That’s why we are using tiny flower buds of broccoli to garnish the soup and retain myrosinase.
