Lemon Coconut Pudding Recipes

Recipe #1

Ingredients:

2 cups young coconut
½ teaspoon lemon extract
1 teaspoon vanilla
½ teaspoon almond extract
1½ tablespoons lemon juice
2 drops stevia
½ teaspoon honey, to balance
1 pinch sea salt
1 cup water, in increments
1 cup ice cubes

Directions:

Put all ingredients, except ice, in a high-speed blender and blend until smooth.
Taste and adjust the sweetness, then add the ice and blend again until cool and creamy.
Serve in small ramekin dishes and garnish with lemon zest before serving.

Recipe #2

Ingredients:

½ cup of lemon juice
3 tablespoons of grass-fed beef gelatin (vegan substitute: 3 tbsp agar powder or agar flakes)
2 cups of full-fat organic coconut milk (in can)
¼ teaspoon of vanilla extract
Stevia to taste

Instructions:

First, Put 1/2 cup of water into a pan, sprinkle the gelatin over the water and set aside for a few mins until it becomes soft and spongy.
Now, put the lemon juice, coconut milk, and vanilla into a mixing bowl or mason jar.
Next, heat the gelatin mixture on low- low heat just until dissolved and no more.
