Prosciutto wrapped Shrimp
Ingredients:
- 20 large shrimps
- 1 tbsp fresh basil
- 1 tbsp virgin olive oil
- ½ tsp lemon zest
- ½ tsp salt
- ¼ tsp red pepper flakes
- 1/8 tsp black pepper
- 10 very thin slice of prosciutto
Method:
- Peel and devein the shrimp.
- In a large bowl mix the shrimp, basil, olive oil and spices. Set aside.
- Cut the prosciutto into halves so that now you have 20 slices.
- Lay one shrimp on each slice and wrap it up.
- Put all the wraps in a skewer and add oil to a broiling pan.
- Once the oil is heated, put the wraps on it and cook for a minute or two till the shrimps are done.
Chicken Pepper Stir Fry
Ingredients:
- 1 chicken breast
- 1 yellow bell pepper
- 1 red bell pepper
- 1 green bell pepper
- 1 small onion
- 4 cloves garlic
- 1 tbsp gluten free soy sauce
- 1 tbsp chilli sauce
- 1 tbsp vinegar
- Salt
- 1 tsp fresh ground black pepper
- 1 tsp red chilli flakes
- 1 tbsp pomace olive oil
Method:
- In a wok, heat the oil and add chopped onions and garlic to it.
- Once the onions are done, add sliced bits of chicken to it and take it out once the chicken is brown.
- Slice all the peppers and add them to the hot wok. Set the flame on high.
- Add the sauces, salt, pepper and keep stirring.
- Add the chicken and stir till everything is cooked. This will take a minute. Then can be served hot.
Chicken in Mushroom sauce
Ingredients:
- 1 whole chicken breast
- 1 packet button mushrooms
- 1 packet assorted mushrooms (brown, shitake etc)
- 1 small onion
- 2 cloves garlic
- 1 cup chicken broth
- 1 cup red wine
- 1 tbsp clarified butter
- 1 tsp salt
- 1 tsp freshly ground pepper
- 1 tsp rosemary
- 1 tsp basil
- 1 lemon
Method:
- In a plastic bag, mix together the whole chicken breast with lemon juice and salt and keep aside in a fridge to marinate.
- Heat clarified butter in a pan and add sliced onions and chopped garlic to it.
- Add the mushrooms and sprinkle salt and pepper on them. Let it cook for a minute or two.
- Add the chicken breast to it and turn around for two minutes.
- Add the broth and the wine and let it simmer in a closed pan.
- Keep checking the consistency every 2 minutes and once the sauce is thick, add fresh basil and rosemary and serve hot.
Gluten free Spinach and oat soup
Ingredients:
- 1 large bundle of fresh spinach
- 4 cloves garlic
- 1 small onion
- 1 tbsp olive oil
- 2 tbsp oat flour
- 1 tsp salt
- 1 tsp black pepper
Method:
- Wash the spinach thoroughly; boil in salted water and strain.
- Put the spinach through a food processor and blend until it’s a thick green paste.
- In a pan, add the oil and chopped onions and garlic and sauté till brown.
- Now, add the oat flour to it and keep stirring till it is cooked. You should be able to smell the roasted oats.
- Add a bit of water and stir it in the pan so that a paste is formed and there are no lumps.
- Add the spinach puree and keep stirring till there are no lumps.
- You can adjust the thickness of the soup by adding the water you boiled the spinach in.
- Keep on flame for 10 minutes, till you can smell the soup and add salt and pepper to it.
- Serve hot.
