4 Detox Soups to Cleanse and Revitalize Your System

Hot and Sour Soup

  • 1 oz. dried mixed mushrooms
  • 8 cups water
  • 3 tablespoons sherry
  • ¼ cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1 tablespoon ginger, grated
  • 1 pound cubed tofu
  • 2 tablespoons corn starch
  • 2 eggs, beaten
  • 6 sliced scallions
  • Dash of white pepper

Put dried mushrooms in bowl with the two cups boiling water. Let it set for about 30 minutes, then remove mushrooms and slice thinly, then keep the liquid for the soup. In soup pot, add remaining 6 cups of water plus reserved liquid and the mushrooms. Bring to a boil, then add sherry, vinegar, soy sauce, salt, ginger, and tofu. Simmer for 10 minutes. In a small bowl, whisk the eggs into a coup of hot broth until dissolved. Pour back into soup and stir. Add scallions and pepper and cook for another 2 minutes, then serve.

Spicy Greens Soup

  • 4 stalks of celery
  • 1 chopped onion
  • 1 chopped green bell pepper
  • 1 cup chopped spinach
  • ½ tsp. cardamom
  • ½ tsp ginger
  • ½ tsp. cumin
  • 1 tsp. mint
  • 1 liter water

Boil vegetables in water and cook for 15 minutes until they soften, then process in blender until smooth and serve hot.

Leek and Radish Soup

  • ¾ pounds halved radishes
  • 3 pounds peeled and cubed potatoes
  • 2 sliced leeks
  • 4 cups chicken stock
  • 2 tablespoons butter
  • 1 cup whole milk
  • Dash of salt and pepper

Add butter to soup pot and add everything but the chicken broth and milk. Mix veggies up, then add chicken broth and bring to a boil. Simmer until vegetables are tender, then cream the soup in a blender, add milk, and salt and pepper it to taste.

Sweet Potato Soup

  • 1 can tomatoes
  • 2 cups chicken stock
  • 1 cup dried green lentils
  • 1 cubed sweet potato
  • 1 chopped onion
  • 1 diced bell pepper
  • 1 tsp curry powder
  • 1 pinch garam masala
  • 3 garlic cloves
  • 1 cup chopped kale
  • 2 cups water
  • 1 diced zucchini

Sauté onion in olive oil, then add sweet potato, garlic, and curry and sauté another 8 minutes. Add tomatoes, lentils, stock and water and simmer for about 45 minutes, or until lentils are tender. Add kale and red pepper towards the end so they don’t overcook. Serve hot.

These soups are delicious but also will serve the dual purpose of both giving your body nutrients and helping to cleanse it of unwanted toxins; they will leave you feeling refreshed and nourished without overdoing the household budget!
