Broccoli Soup
Ingredients:
- 2 cups chopped broccoli
- 2 diced celery sticks
- 1 diced onion
- 2 crushed garlic cloves
- 1 cup spinach
- 1 peeled and chopped parsnip
- 1 peeled and chopped carrot
- 2 cups vegetable stock
- ½ teaspoon sea salt
- Juice from ½ of a lemon
- 1 teaspoon coconut oil
- 1 tablespoon chia seeds
Directions
In a soup pot, saute onions, garlic, parsnips, carrots and broccoli in coconut oil for about five minutes. Add vegetable stock, then bring to a boil and simmer for 5-7 minutes. Stir in greens and chia seeds, then transfer to blender and puree until smooth. Serve hot.
Beetroot Soup
Ingredients:
- 3 peeled and chopped beetroots
- 2 chopped carrots
- 1 diced onion
- 2 crushed garlic cloves
- 1 diced leek
- 1 teaspoon coconut oil
- 2 cups vegetable stock
- ¼ teaspoon sea salt
Directions
Place beetroot in boiling water and cook until tender, about fifteen minutes. Set aside. In a cast-iron skillet, saute garlic, leeks, carrots, and onions for 5-7 minutes then transfer to a bowl. Add beetroot and sautéed vegetables to vegetable stock, then pour into blender and process until smooth.
Sweet Potato Soup
Ingredients:
- ½ cup cooked red lentils
- 1 peeled and chopped sweet potato
- 3 peeled and chopped carrots
- 1 peeled and chopped parsnip
- 1 peeled and chopped onion
- 3 crushed garlic cloves
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon ginger powder
- ¼ teaspoon sea salt
- 2 cups vegetable stock
- 1 teaspoon coconut oil
Directions
Heat oven to 350 degrees. Line a baking sheet, then spread the sweet potatoes and other vegetables on the sheet and add coconut oil and spices, tossing until the vegetables are coated. Roast for 20 minutes, then transfer to a blender, add vegetables stock and process until smooth.
These recipes are simple and relatively inexpensive to make. However, they are all not only delicious but are great ways to help detoxify the liver and keep it functioning at its best so that the whole body will benefit.
